Zilker Brewing Co Pale Ale

Pale Ale

A golden hued pale brewed with pilsner malt, noble hops, and our unique house yeast. Dry hopped with a blend of noble and American hops to complement the subtle fruity yeast profile, providing a complete flavor and aroma experience. This beer is for those looking to get more out of their go to beer. Full flavor upfront, with a clean finish. 4.9% ABV. [draft and cans]

Marco IPA

Our original 7.0% American IPA features El Dorado and Simcoe hops. “Burnt Orange” in color, it has a substantial and complex malt profile. Powerful aromatics of tropical fruit and pine, from extensive dry hopping, will welcome you. A warm, bready malt character quickly washes away the initial bitterness, and then gives way to the resinous hops. Overall, a well balanced and full-bodied IPA with complexity in both the malt and hop profiles. [draft and cans]

Coffee Milk Stout

Inspired by Cafe’ Cubano, this 5.9% American stout is brewed with lactose and Huila Acevedo coffee beans from our friends at Flat Track Coffee Roasters. The beans produce a soft, sweet, savory profile with hints of cherry that pair perfectly with the beers’ creamy texture and burnt sugar notes. Rotating seasonal coffee varieties will be used with each new batch. Stay tuned for more details! [draft and cans]

Honey Blonde

A light, crisp, and balanced American Blonde Ale.  A touch of honey rounds out the German pilsner malt that is the base of this easy drinker 4.8% ABV.  [draft only]

Seasonal IPA(Taproom IPA)

Only the freshest, resinous, and unique hops are used in this (nearly taproom exclusive) rotating hop IPA.  It’s big on hop aroma and flavor, but low on bitterness.  A 100% Heirloom Vienna Malt bill ensures a hop forward beer with just enough malt backbone. 6.8% ABV [draft only]

Extra Special Bitter (fall and winter seasonal]

A Texan take on an English classic. This ale greets you with a crisp bitterness, but then quickly brings forth it’s malt complexity. Rich and toasty malts dominate and set this beer apart from its caramel driven English counterparts. Balance is always key, as this beer has excellent quaffability and plenty of flavor to stimulate your taste buds indefinitely. 5.8% ABV [draft only]

Tafelbier (Summer Seasonal)

Flemish for Table Beer, this straw colored Belgian session ale provides the complexities of a Belgian beer without the intoxicating efficacy of its high alcohol brethren.  You’ll find it dry, complex, and quaffable. 3.8% ABV.  [draft only]

Session IPA (summer seasonal)

Light, crisp, and hop forward, this tweener ale has the drinkability of a pale ale and the hoppy punch of an IPA. A simple malt bill anchored by organic pilsner allows the house yeast and American hops to shine through, producing the piney and citrusy flavor and aroma you expect from an American IPA, and of course it’s dry hopped. 5.5% ABV. [draft only]

Festbier (Fall Seasonal)

Not to be confused with its maltier sibling, the Marzen lager; this golden modern day Oktoberfest style lager is the preferred style for the Oktoberfest celebration in Munich, Germany.  It’s crisp yet malt forward mouthfeel is achieved using a 3-step mash process and a thorough fermentation and lagering schedule. 5.5% ABV [draft only]
